Market Editor Peter Dolkas is enthusiastic about Bee’s Knees, the Prohibition-era cocktail that, rumor has it, was created to mask the harsh flavor of bootleg “bathtub” gin. While concealment of the spirit’s taste may have been the goal, the result is delicious. “It’s perfect for when you’re looking for something on the sweeter side, but still with an herbal edge. Plus it has a great name!,” Dolkas raves. Some say the drink’s moniker references the honeybee, whose knees become encrusted with nectar as they fly from flower to flower. Others argue that it’s a nod to the Jazz Age’s slang for something cool and of the moment, and we agree. The simple mixture of honey, lemon (the perfect showcase for gin’s complex botanicals) is definitely the bee’s knees.
1/4 cup hot water
1 teaspoon dried lavender blossoms
1/4 cup honey
6 tablespoons gin
2 tablespoons lemon juice
1. Mix hot water and dried lavender blossoms in bowl. Let steep 5 minutes.
2. Whisk in 1/4 cup honey. Strain into another bowl.
3. Add 3 tablespoons of the honey syrup, gin, and lemon juice; strain into cocktail shaker with ice.
4. Shake well and strain into 2 chilled Martini glasses.
